Description

This deliverable presents the set of healthy products and recipes co-created in some of the living labs of the DIVINFOOD project from the first batch of varieties of neglected and underutilised crops (NUCs) selected during the first period of the project. This deliverable thus also highlights mild processes that can be implemented with NUCs. It compiles a number of experiments and tests carried out in the LLs to introduce NUCs into innovative or renewed recipes/products. These experiments were carried out by or in collaboration with local food SMEs (small-scale processors, collective catering, commercial restaurants), along a co-creation perspective.
