Densities and viscosities of ternary systems of maltose, alkali metal halides and water from 293.15 to 313.15 K

Densities and viscosities of ternary systems involving maltose, alkali metal halides (NaCI, KCI, KBr and Kl) and water have been
determined at temperatures : 293.15, 303.15 and 313.15 K. From the density data the values of limiting apparent molar volume
(Vϕ0) of maltose in purely aqueous solutions and also in the presence of NaCI, KCI, KBr and KI have been obtained with a view
to determining the partial molar volume of transfer (V20.tr). of maltose from water to aqueous solutions of NaCI, KCI, KBr and
KI. The viscosity data of alkali metal halides in purely aqueous solutions and in the presence of maltose have been analyzed by
applying Jones-Dole equation. The structure-making and structure-breaking capacities of NaCI, KCI, KBr and KI in purely aqueous
solution and in the presence of maltose have been ascertained from the temperature dependence of Vϕ0.
