Bacillus cereus bacteria in foodstuffs may cause gastrointestinal diseases

Description

Bacillus (B.) cereus is the name-giving representative of the B. cereus group, which currently includes 17 recognised, closely related species that can only be distinguished from each with great difficulty. Consequently, in food inspections mostly only the so called presumptive B. cereus is detected, which means: a bacterium from the B. cereus group. The current opin- ion provides information about health risks from bacteria of the B. cereus group in foods and names preventative measures, mainly in order to create a basis for assessing foodstuffs by food control authorities in Germany.
