Description

This dataset contains comprehensive analytical data on the basic chemical composition and physical properties of powders used for the preparation of plant-based beverages. The dataset further includes detailed characterization of the resulting products in terms of antioxidant capacity, identification and quantification of polyphenols, as well as sensory-related evaluation obtained using electronic nose and electronic tongue systems. The research employed standardized analytical methods to provide a robust description of both the raw materials and the final beverages.
