This presentation is part of the training material of FunShield4Med 3rd Seminar entitled "The Occurrence of Non-Regulated Mycotoxins in Foods" held at Institute of Technology of Agricultural Products on 21 March 2024. The presentation highlights the growing concern around non-regulated (emerging) mycotoxins, whose occurrence in food is increasing due to climate change and global trade. These compounds, such as Alternaria toxins (AOH, AME, TeA), are found in a wide range of foods—from grains and legumes to tea, dairy, and processed products—yet lack sufficient regulatory oversight. It calls for routine monitoring and consensus terminology, stressing the urgent need for standards, reference materials, and more funding to support risk assessment. With EFSA already evaluating several of these toxins, future regulation appears likely.
