This presentation is part of the training material of FunShield4Med 1st Seminar entitled "Identification of Mycotoxins" held at Institute of Technology of Agricultural Products on 16 May 2023. The session explores the evolving landscape of mycotoxin research, highlighting the complexity of identifying regulated, emerging, and modified toxins in food. It outlines analytical strategies—ranging from rapid screening to advanced LC-MS-based methods—for detecting known and unknown compounds. Emphasis is placed on modified mycotoxins formed through biological or processing pathways, and the growing concern around underregulated groups like Alternaria toxins. The presentation also underscores the need for high-quality data and horizon scanning to stay ahead of emerging risks. A forward-looking perspective calls for stronger monitoring frameworks and deeper insight into plant–fungus interactions.
