Analisis Kelayakan Finansial dan Nilai Tambah Bandeng Presto pada UMKM di Kecamatan Tirtajaya Kabupaten Karawang

Karawang Regency is a producer of pond aquaculture of 41,806 tons. In 2022. Tirtajaya District is one of the sub-districts in Karawang Regency which produces fisheries reaching 7,182 tons. Tirtajaya District is the second producer of milkfish in Karawang Regency with production reaching 2,307 tons. Presto milkfish is processed fresh milkfish that has been seasoned and then cooked using the pressure cooking method using a pressure cooker which can change the texture of the flesh, bones and spines of the milkfish meat to become soft. Presto milkfish has the prospect of being a source of income for the community from creating added value. However, there are only 5 MSMEs that actively produce presto processed milkfish. This research aims to analyze the financial feasibility and calculate the amount of added value of processed milkfish products for MSMEs. The method used is quantitative descriptive. The sample in this study was MSMEs producing presto milkfish, according to census. Data collection techniques use observation, interviews and documentation. The financial feasibility analysis technique uses the R/C method and added value analysis uses the Hayami method. The results of this research indicate that the business activity of processing presto milkfish is feasible with an R-C ratio of 2.44. In the presto milkfish product, it was found that the added value created was IDR 15,561 per head or IDR 62,244 per kg of presto milkfish, which is equivalent to 63% of the product value. The added value created is in the high category. MSME activities for processing pressure-cooked milkfish products are feasible and are recommended to expand their business scale and develop product variations.
