Butchered Animal Rib

Description

This butchered animal rib was discovered by the CAP crew during the 2015 field school while excavating a trash pit associated with the former residence of Thomas Gunson. Gunson was a beloved Professor in the Horticulture Department at the college. He resided in a house with an attached greenhouse on the campus grounds from 1891 until his death in 1940. He was known for throwing lavish dinner parties and would invite friends, faculty, and even students. It is possible that this this animal rib was disposed of after one of these dinner parties. Although the species has yet to be identified, the rib comes from a medium sized mammal - likely from a pig, sheep, or goat. The cut through the rib indicates that this particular cut of meat was a pork chop, lamb chop, or part of a rack of loin ribs - all choice cuts!
