This document, the first in a series of three reports, covers ‘sampling and testing’ procedures for Shiga toxin-producing Escherichia coli (STEC), Enterotoxigenic Escherichia coli (ETEC), Cryptosporidium spp. and antimicrobial resistance (AMR) in Salmonella spp. and Campylobacter spp. in the EU. Future reports will cover ‘characterisation’ and ‘data management and harmonised reporting’. The report is divided in sections covering each of the target microorganisms with subsections on current practices, best practices, detection methods and the latest sampling technological developments. The information provided on current practices is based on the responses to a questionnaire completed by European public health, veterinary and food testing institutions and National Reference Laboratories reached via the European Union Reference Laboratory (EURL), the European Food Safety Authority (EFSA) Zoonoses networks, European Centre for Disease Prevention and Control (ECDC) Food and Waterborne diseases network, among others. The other sections were prepared by experts in the respective areas, with reference to the peer reviewed and other relevant technical literature.
