This repository gathers all outputs produced by the PRIMA EU-funded project "Innovative Bio-interventions and Risk Modelling Approaches for Ensuring Microbial Safety and Quality of Mediterranean Artisanal Fermented Foods" [ArtiSaneFood] (http://prima-med.org/results-of-the-call-prima-section-2-multi-topics-2018/).

The ArtiSaneFood community collection involves protocols, technical and scientific articles, and datasets on: (i) Food processing chain of fifteen artisanal foods and their level of contamination by foodborne pathogens; (ii) In-vitro and in-situ anti-pathogenic effects and technological properties of commercial and/or indigenous lactic acid bacteria; (iii) In-vitro and in-situ antimicrobial activity of selected plant-based extracts; (iv) Sensory data of organoleptic properties of the artisanal foods produced using biopreservation methods; and (v) Effects of biopreservation strategies and enhanced process variables on safety improvement of artisanal foods.
