POMEGRANATE AS A VALUABLE BIOLOGICALLY RAW MATERIAL FOR FOOD FOR THE NEEDS OF THE FOOD PROCESSING INDUSTRY

Abstract
Pomegranate (Punica granatum L.) is a fruit rich in biologically active compounds that contains bio-waste (peel and seeds) that can potentially be converted into products for a wide range of applications. Recent studies have demonstrated the powerful antioxidant and antimicrobial effects of using pomegranate peel and seeds as natural food additives, which has prompted researchers to use them in bioplastics and edible coatings for food packaging. In addition, these components have a strong plasticizing effect on packaging materials, while simultaneously prolonging the shelf life of food products due to active packaging. Pomegranate seed oil and its biologically active compounds were particularly effective in combating the effects of ultraviolet light on the skin of animals and on in vitro models, where cells and microorganisms are separated from the whole organism. They also promote wound healing and have pronounced anti-inflammatory, analgesic and antibacterial properties. Of particular interest are pomegranate ingredients, which are already mass-produced and presented in the markets of pomegranate ingredients for health. In this article, just a brief overview of the latest technological and product innovations in this area is given to help innovation managers choose the right direction in accordance with the conditions and objectives of the business.
