El cacahuete es una de las leguminosas más consumidas. Hasta hace poco era percibido como un alimento poco saludable debido a su alto contenido en grasas de ≥ 50% en su peso. Sin embargo, estudios recientes han demostrado que la inclusión en la dieta de cacahuetes está relacionada con la reducción de problemas cardiovasculares,reducción de riesgo en ciertos tipos de cáncer y mejora en el control del peso corporal. Todos estos efectos sobre la salud, se debe al alto contenido en compuestos bioactivos de entre los que cabe destacar fitoesteroles (β-sitosterol) y ácidos fenólicos (estilbenos, daidzeína y genisteína).Si bien el cacahuete ha sido considerado un alimento poco saludable, en la actualidad su consumo se ha incrementado debido en gran parte a la evidencia sobre sus propiedades saludables y a que es un alimento asequible y económico.
