Aim: The study of the influence of high-fat diet on the emotional and behavioral reactions of rats and biochemical parameters of the brain.
Materials and Methods: There were studied 36 rats. Dietary fats (usual sunflower oil, high oleic sunflower oil "Olivka", butter, palm oil, coconut oil) were introduced into the ration of rats in an amount of 15 %. Once a week with animals, they conducted research on the "Open Field" test. The animals were withdrawn from the experiment on the 61st day. In the brain, the content of malondialdehyde, catalase activity, urease, lysozyme and elastase were determined.
Results: It has been found that anxiety of rats increases and research activity decreases after adding palm oil and usual sunflower oil to the diet. The addition of high oleic sunflower oil "Olive" increases research activity and does not affect other indicators. Increased anxiety and decreased research activity may be due to biochemical changes in the brain of rats: a significant increase in the activity of elastase and urease against the background of reduced activity of catalase and lysozyme after the use of conventional sunflower oil, palm oil and butter. The high oleic sunflower oil "Olive" did not adversely affect the biochemical parameters of the brain of rats.
Conclusions: The long-term use of palm and sunflower oil as well as butter increases the anxiety of rats, which may occur as a result of an increase in urease activity in the brain, elastase against the background of a decrease in the activity of catalase.
Key words: rats, fat diet, emotional behavior.
