Poule-au-Pot [stuffed hen cooked in pot] is undoubtedly a classic of French cuisine and a dish that occupies an important place in the national imaginary. However, we emphasize here in another of its dimensions, more intimate, more regional too. In South-West France countryside, the stuffed hen was one of dishes served on certain occasions, which involved the honour of the housewife. Nowadays, Poule-au-Pot is still prepared for family festive meals in the cited area. In this context, putting the hen in the pot often becomes an act that reveals many mechanisms of the family passing on culinary knowledge.
