  • Abstract. The valorization of poultry processing by-products offers opportunities for recovering protein-containing materials and improving resource utilization. This study investigated the effect of processing temperature on the chemical composition of hydrolysates obtained from chicken feet. Hydrolytic treatment was performed at 50, 65, 80 and 95 °C. The resulting samples were evaluated by spectrometric analysis for protein, fat, moisture, collagen and ash content. The preliminary findings described in the study indicate temperature-related differences in composition; however, quantitative values and statistical estimates are not yet presented. The work provides a basis for further comparison of processing conditions and the development of approaches to the recovery of collagen-derived materials. The interpretation distinguishes compositional assessment from the determination of hydrolysis degree and functional properties. Keywords: chicken feet; hydrolysis; temperature; collagen; chemical composition; poultry by-products.
