Metabolomics of Commercially Available Fermented Foods

Targeted metabolomics profiles of commercially available fermented food samples analyzed through the Periodic Table of Foods Initiative piplines in collaboration with Verso Bio. Whole food samples were processed through the Periodic Table of Food Initiative’s (PTFI) protocols for reverse phase LC-MS/MS metabolomics and polar metabolomics (HILIC LC-MS/MS). Polar and semi-polar metabolites were analyzed using the MarkerLab HILIC LC-MS/MS platform. Reverse phase and HILIC metabolites are in two different spreadsheets. Included above are the metadata for each sample, which can be cross-referenced against other multi-omics measurements with the FF#### study sample codes.
