Dieses Fachbuch entwickelt eine kritische Ernährungswissenschaft der vollständig pflanzlichen Ernährung mit einer eigenen methodischen Linie abseits der Lehrmeinung. Statt Ratgeber oder Reproduktions-Lehrbuch verfolgt es die kritische Rekonstruktion mit drei Werkzeugen: der Anspruchs-Kodierung (K/P/I/N) zur Aufdeckung von Anspruchs-Inflation, der Stakeholder-Transparenz auf Basis der Cochrane-Evidenz zum Sponsor-Bias, und der Risiko-Dispositions-Asymmetrie (ρ/δ). Über 18 Kapitel behandelt es Biochemie und Stoffwechsel, die kritischen Mikronährstoffe (mit Vitamin B12 als unverhandelbarem Fall und Omega-3/DHA als zweiter aktiver Strategie), Humanbiologie und Mikrobiom, und die Stakeholder-Kritik der Ernährungspyramide (USDA und AGES als strukturell vergleichbare Doppelmandat-Fälle). Als konstruktiven Beitrag schlägt es eine Neuinterpretation vor: ein funktionales Schichtmodell mit sichtbarer Supplement-Schicht statt der mengen-hierarchischen Pyramide. Die zentrale These lautet, dass die pflanzliche Ernährung — gut geplant — wissenschaftlich tragfähig ist, ihre Herausforderungen benennbar und gelöst sind, und die ehrliche Position weder bei Alarmisten noch Apologeten liegt, sondern in der präzisen, asymmetrie-bewussten, stakeholder-transparenten Analyse.

This textbook develops a critical nutritional science of fully plant-based nutrition with an independent methodological line beyond the mainstream. Rather than a diet guide or a reproduction textbook, it pursues critical reconstruction with three tools: claim coding (K/P/I/N) to expose claim inflation, stakeholder transparency grounded in Cochrane evidence on sponsor bias, and risk-disposition asymmetry (ρ/δ). Across 18 chapters it treats biochemistry and metabolism, the critical micronutrients (with vitamin B12 as the non-negotiable case and omega-3/DHA as a second active strategy), human biology and the microbiome, and a stakeholder critique of the food pyramid (USDA and AGES as structurally comparable dual-mandate cases). As a constructive contribution it proposes a reinterpretation: a functional layer model with a visible supplement layer instead of the quantity-hierarchical pyramid. The central thesis is that plant-based nutrition — well-planned — is scientifically viable, its challenges nameable and solved, and the honest position lies neither with alarmists nor apologists but in the precise, asymmetry-aware, stakeholder-transparent analysis.
