Dataset S2: Raw experimental data for "Enzymatic Production, Spray-Drying Stabilisation, and Dual-Target Molecular Docking Screening of ACE-Inhibitory Rice Protein Hydrolysates with Antihypertensive Activity in Spontaneously Hypertensive Rats

This dataset contains the complete raw experimental data supporting all main figures, tables, and supplementary materials in the associated manuscript. The Excel file comprises 14 worksheets organised as follows:

Hydrolysis and in vitro data (Sheets 1–5):

• Table 1 – SSC: Soluble solids content (°Brix), triplicate measurements for 4 enzymes × 3 hydrolysis times
• Table 1 – DH OPA: Degree of hydrolysis by OPA method, replicate measurements
• Table 1 – DH pH-stat: Degree of hydrolysis by pH-stat method, triplicate measurements
• Table 1 – Yield: Hydrolysate yield (%), triplicate measurements
