I: Forest understorey transformed into artisan ice cream - Southern Sweden

Browsing beneath the canopy of a natural beech forest in southern Sweden, a small herd of dairy goats make use of the woodland understorey, while contributing to vegetation management. Their milk is transformed into artisan ice cream by the young farmer, who also draws inspiration and flavour from berries harvested in the forest's natural pantry. Photography: M. Lindström Kling.
