Data generated during the validation of Epagri's vertical depuration system in terms of reduction of Escherichia coli levels in oysters (Crassostrea gigas)

Description
Depuration is a process to reduce microbial contamination in bivalve molluscs, such as oysters, to acceptable levels for human consumption by keeping the animals in tanks with salt water. Conventional depuration systems occupy large floor areas, which limits their use in small processors. As an alternative, Epagri developed a compact vertical system that is easy to construct using materials available on the Brazilian market, composed of 10 adapted fish crates (42L) stacked over a reservoir from which seawater is continuously pumped and disinfected by UV radiation. The efficiency of the system was evaluated in three 42-hour depuration cycles with oysters. Here we share the results of the validation assays, including: oyster biometric data; water temperature and other parameters; and the levels of the faecal indicator bacteria, Escherichia coli, in oysters during depuration.
