imgag/aiDIVA: Release 1.3.0

Add possibility to use structured output in the LLM calls:

• this gives the possibility to explicitly specify the output of the LLM with a JSON schema
• makes parsing of the output easier
• this STRUCTURED mode can be specified in the configuration file
• updated the example configuration file to show this possibility
• for now it replicates the NORMAL mode and the resulting table is the same as before

Renamed v1.0.0 models to match the release version (retraining was not needed)
