Description
Technical note examining cocoa shell carry-over in commercially produced cocoa mass as a processing-dependent compositional variable. Based on LC-MS/MS metabolite tracking methods reported in recent literature, this note considers whether residual shell material in cocoa liquor may represent a measurable food matrix component of potential nutritional relevance beyond authenticity or yield considerations.
