In the context of a modern market economy, stable control over the quality of food
products is an important factor in ensuring the competitiveness of enterprises. As a result of digital
transformation processes, the introduction of Internet of Things (IoT) technologies into production
processes makes it possible to monitor, control, and analyze product quality in real time. This thesis
analyzes the mechanisms for automatic recording of temperature, humidity, pressure, and other important
parameters at the stages of production using IoT sensors, storing data in a cloud system, and predicting
quality deviations using artificial intelligence algorithms.
