Data for this study were collected through online surveys administered in Italy, the Netherlands, and France by Ipsos, drawing on their proprietary online panel infrastructure.The survey employed a Computer-Assisted Web Interviewing (CAWI) approach and was independently conducted in each country by the same institute to ensure uniformity in data collection procedures. Data were collected in April 2023 for Italy and the Netherlands, and between March and April 2024 for France; this variation reflects practical constraints related to project funding. Quota sampling was applied based on age (18–24, 25–34, 35–44, 45–54, 55–65), gender (male, female), and education level (low, medium, high) to reflect the sociodemographic composition of the working-age population in each country. Respondents younger than 18 or older than 65 were excluded.

The study adhered to the Declaration of Helsinki and received ethical approval from the Bioethics Committee of the University of Turin (Approval No. 0212054). All participants provided informed consent prior to participation, and compensation was administered according to Ipsos’ standard panel reward system.

 Data for the present study were collected within a broader research project focused on novel food acceptance. Participants completed an online questionnaire structured into sections. The first section collected sociodemographic information (age, gender, education, and dietary style). The second section included the adapted New Naturalness Scale (Michel and Siegrist, 2019).
