The article investigates the socio-economic and technological aspects of healthy nutrition in the context of sustainable development. The work uses methods of scientific abstraction and generalization, analysis, economic-mathematical, comparative. The scientific novelty of the results obtained lies in the comprehensive study of the socio-economic and technological aspects of healthy nutrition as a component of sustainable development goals. It has been established that the provision of a balanced diet of Ukrainians is deteriorating and becoming insufficient in terms of target guidelines and unbalanced in terms of energy value and nutrient content due to destructive hostilities. It has been determined that in order to increase the possibilities of providing healthy nutrition, it is necessary to search for non-traditional sources of protein as a healthy alternative to meat protein. It has been established that the use of vegetable protein as a healthy alternative contributes to solving such a problem. It is proposed to expand the range of specialized food products by developing chopped semi-finished products on a plant basis. The feasibility and economic efficiency of producing such food products have been proven.
