O PAPEL DA DIETA NO CONTROLE E DESENVOLVIMENTO DA DOENÇA CÁRIE EM CRIANÇAS: UMA REVISÃO NARRATIVA DA LITERATURA

Introdução: A cárie dentária infantil é uma doença crônica de elevada prevalência e representa um importante problema de saúde pública, com repercussões que incluem dor, limitações funcionais, dificuldade alimentar e impactos negativos sobre a qualidade de vida de crianças e familiares. Sua etiologia é multifatorial e envolve a interação entre biofilme dentário, ingestão de açúcares fermentáveis e o tempo de exposição desses substratos sobre as superfícies dentárias, reforçando o papel central da dieta no início e na progressão da doença. Objetivo: analisar a influência da dieta no controle e no desenvolvimento da doença cárie em crianças, enfatizando componentes alimentares, comportamentos nutricionais e estratégias preventivas relacionadas ao risco cariogênico. Metodologia: foi realizada uma revisão narrativa da literatura com levantamento bibliográfico nas bases PubMed, SciELO e EBSCOhost, considerando artigos publicados nos últimos dez anos e excluindo literatura cinzenta. Revisão da literatura e discussão: a literatura demonstra que a sacarose e outros carboidratos fermentáveis reduzem o pH bucal rapidamente, favorecendo a desmineralização dentária. Evidências apontam que a frequência de ingestão de açúcares é um fator mais determinante que a quantidade consumida, especialmente em crianças expostas continuamente a bebidas açucaradas, snacks ultraprocessados e alimentos pegajosos. Há também relação entre risco cariogênico e hábitos como uso prolongado de mamadeira, aleitamento noturno sem higienização e padrões alimentares inadequados no ambiente familiar. Em contraste, alimentos protetores como laticínios, queijos, frutas fibrosas e oleaginosas auxiliam na neutralização ácida, estimulam o fluxo salivar e contribuem para a remineralização. Estratégias como educação nutricional, diário alimentar e ações escolares mostram-se eficazes na modificação de hábitos. Considerações finais: conclui-se que a dieta exerce influência decisiva na saúde bucal infantil e que sua adequada orientação, aliada a medidas preventivas, é essencial para o controle da cárie e a promoção da saúde oral.

Introduction: Childhood dental caries is a highly prevalent chronic disease and represents an important public health issue, with repercussions that include pain, functional limitations, feeding difficulties, and negative impacts on the quality of life of children and their families. Its etiology is multifactorial and involves the interaction between dental biofilm, the intake of fermentable sugars, and the duration of exposure of these substrates on tooth surfaces, reinforcing the central role of diet in the onset and progression of the disease. Objective: To analyze the influence of diet on the control and development of dental caries in children, emphasizing dietary components, nutritional behaviors, and preventive strategies related to cariogenic risk. Methodology: A narrative literature review was conducted through a bibliographic search in PubMed, SciELO, and EBSCOhost, considering articles published in the last ten years and excluding gray literature. Literature review and discussion: The literature shows that sucrose and other fermentable carbohydrates rapidly reduce oral pH, favoring dental demineralization. Evidence indicates that the frequency of sugar intake is a more decisive factor than the amount consumed, especially in children who are continuously exposed to sugary beverages, ultraprocessed snacks, and sticky foods. There is also an association between cariogenic risk and behaviors such as prolonged bottle use, nighttime breastfeeding without hygiene, and inadequate eating patterns within the family environment. In contrast, protective foods such as dairy products, cheese, fibrous fruits, and nuts help neutralize acids, stimulate salivary flow, and contribute to remineralization. Strategies such as nutritional education, food diaries, and school-based actions have proven effective in modifying habits. Final considerations: It is concluded that diet exerts a decisive influence on children’s oral health and that proper dietary guidance, combined with preventive measures, is essential for caries control and oral health promotion.
