This dataset contains experimental data used in the manuscript "Effects of drying method and temperature on phenolic composition, antioxidant activity, and in vitro digestion of apple pomace and enriched cookies". Please note that the title may change during the publication process.
It includes measurements of phenolic composition, antioxidant activity, and total phenolic content. Antioxidant activity and total phenolic content were measured both before and after in vitro digestion.
The dataset contains only sample-level measurements and does not include any personal or identifiable information.
