Introduction: Quinoa is a cereal that has a high nutritional value, with a growing demand for international consumption, especially in the USA. Agronomic factors and 
organic practices affect the yield of quinoa crops, which directly affects the quality of the grain delivered to the collection centers.  Objective: The objective is to examine the production system in an industrial plant, which demonstrates the effectiveness of quinoa processing at the operational level, based on the results of the mass balance. Methodology: non-experimental and descriptive design is used. The agricultural production systems of quinoa and its potential market are analyzed.  In addition, a detailed study of the production system in an industrial plant was carried out. Results: Detailed information is presented on the operational functioning of a quinoa production plant, the machinery used, the processes involved and the production capacity, contributing to a detailed and well-founded evaluation of the project. The mass balance of quinoa processing is 75%, which highlights the efficient performance of the system. Conclusion: The research underlines the importance of adopting sustainable practices and complying with safety standards to improve quinoa's position in national and international markets. The generation of by-products, such as saponin, shows a marketable potential that should not be wasted.  General area of study: Industrial Plants. Specific area of study: Mass Balance.
