The MixMatters project develops an Integrated System for separating and valorising bio-waste from the agri-food sector. This study focuses on the Valorisation Hub, where fruit and vegetable biomass from wholesale markets, greenhouses, and the food industry undergoes enzymatic saccharification to break down complex sugars. The resulting simple sugars are then fermented by a recombinant E. coli to produce 2,3-butanediol, a valuable chemical building block. This approach enhances resource efficiency and promotes sustainable bio-based solutions.
