fewagner/cait: Support for python3.11 and 3.12

Description

  • added support for python versions 3.11 and 3.12
  • moved to pyproject.toml
  • added possibility to automatically calculate RMS when applying the optimum filter. The option can be toggled using the calc_rms keyword on the dh.apply_of method.
  • added tests for general workflow
  • new (experimental) features in cait.versatile
  • documentation for cait.versatile in preparation
