Description
Se presenta un trabajo que aúna los principales estudios arqueológicos desarrollados sobre el conocimiento de la producción de conservas de pescado romanas en Carteia (San Roque, Cádiz). Se recoge aquí la totalidad de los edificios salazoneros (cetariae) documentados en esta ciudad, todo lo cual confirma ahora, gracias a esta recopilación y análisis, que Carteia no solo fue un referente estratégico y comercial sino también un importante productor de salsas y salazones de pescado durante toda la época romana.
Abstract (English)
Carteia and the Production of Roman Sauces and Salted Fish in the Strait of Gibraltar. This paper presents the main archaeological studies undertaken in relation to the production of Roman salted fish in Carteia (San Roque, Cadiz). All the salted fish facilities (cetariae) documented in the city are examined, and this confirms that Carteia was not only a strategic and commercial point of reference, but also an important center for the production of sauces and salted fish throughout the Roman period.
