Some Biochemical Indices of Persimmon Varieties

The content of total sugar, glucose, fructose, titratable acidity, vitamin C and minerals has been studied in environmentally clean ripe fruit of the Hachia and Hiakume varieties of persimmon. The method of gas chromatography-mass spectrometry revealed some representatives of phenolic compounds in persimmon fruit and their antioxidant and anti-microbial characteristics were investigated.
