Description
The outcomes from Task 2.4 were derived from a experimental assessment of nutritional quality, which included:
- Protein Digestibility Corrected Amino Acid Score (PDCAAS): Evaluating protein quality based on digestibility and amino acid composition
- Analysis of Anti-Nutritional Factors: Investigating components such as:
- Protease Inhibitors: Substances that can hinder protein digestion.
- Polyphenols: Compounds that may negatively impact amino acid bioavailability
