Scaling the process of obtaining an enzyme preparation of exopolygalacturonase from the culture of the fungus Lentinus edodes (Berk.) Singer 480
Description
The scaling process of obtaining an enzyme preparation of exopolygalacturonase (Exo-PgS) from the culture of Lentinus edodes (Berk.) Singer 480 has been studied. The maximum values of Exo-PgS were observed on the 10th day of cultivation, both on small and large volumes of the nutrient medium, with a significant maximum on a medium volume of 1 000 ml. The enzyme preparation Exo-PgS from the culture of the fungus L. edodes 480 is thermally unstable, but short-term heating (15 minutes) of the enzyme preparation solution causes some stabilization of the protein molecules of the Exo-PgS enzymes. The studied enzyme preparation of exopolygalacturonase action includes acidic and neutral exopectinases of directed action, which have an optimum pH of activity of 4.4–4.8 and 6.8–7.2.
