In Food Research International. The folder Elettra_SAXS_DSC contains processed data of SAXS, WAXS and DSC collected at Elettra sincrotrone Trieste in March 2022 (SAXS-DSC setup). The folder ESRF viscosity and SAXS contains data collected at ESRF in September 2022 (Rheo-SAXS setup). The folder PLM images contains the raw images and processed data collected with and without shear using polarized light microscopy. The file named Aged samples benchtop SAXS contains scattering pattern collected with a benchtop SWAXS equipment after few days of applying the thermal treatment. The file Diamond CBE crystallization contains processed data collected at Diamond Light Source in February 2020. The file Elettra Data SAXS 6months old samples contains processed SAXS data of the samples processed in March 2022 and measured again in Septmeber 2022.
