Okay, I have a question for you.
What does this have anything to do with what I'm going to be showing you today?
Jessica, you just showed me a man in a blue speedo sitting in a restaurant with a parrot.
What the hell does that have anything to do with your recipe?
Repairings. That's what it has to do with the things we're inspired by.
Let's make some blueberry breakfast sausage sweet potato bake.
Oh, it is going to be a strange, odd coupling, odd combination, but it's good. It is good.
So what do you say we get started?
We're going to heat up the oven to 400 and, yeah, 400 degrees.
And this part's pretty simple. All we're going to do is just cut our sweet potato in half.
Just be careful.
Okay, just put a little bit of oil on here so it doesn't stick to your pan.
You're going to put it cut side down and we're going to put it in the oven 400 degrees for about 25 to 30 minutes.
So it gets all nice and soft.
Whoa, baby.
Okay, so in the meantime, while our sweet potato is baking up in the oven,
I'm going to go ahead and start on the filling, that blueberry filling.
I'm going to go ahead and heat my front pan to about medium and I've got turkey sausage.
They're fully cooked and I'm just going to chop them up and then warm them up on the stove.
And then I'm going to add my blueberries. It's such an interesting combination.
The sweetness from these sausage links and just those bursts of sweet flavor from those blueberries.
The way those blueberries burst in your mouth, it's pretty incredible.
I mean, not as incredible as seeing a blue macaw down in Venice Beach.
But I digress.
Oh yeah, blueberries. Oh my gosh, the antioxidant, the miracle berry.
Let me tell you, blueberries help reduce age related memory loss.
What?
Blueberries contain so many antioxidants and antioxidants help neutralize the free radicals in the body,
which help prevent against cancers and the effects of aging.
And then you've got that creaminess from the sweet potato.
Can I tell you what goes on in a sweet potato?
Vitamin D helps build healthy bones, teeth, skin, boosting energy levels in your mood.
That's awesome.
Did you know that sweet potatoes also contain a lot of magnesium?
Relaxation and anti-stress mineral.
So I'm going to add my turkey sausage to the pan.
Just going to kind of warm it through while that's heating up.
I'm going to go ahead and crack my egg.
And we're just going to need half an egg for this batch.
So I'm going to go ahead and whisk it up.
And I've got my half cup.
You can do fresh blueberries.
You can do frozen.
We're going to add those in at the end so they kind of keep their integrity.
They stay the shape and the flavor we want.
My turkey sausage is heated through, so I'm just going to put a lid on it.
I'm just going to keep it on low, and I'm just going to wait for my potato to be done in the oven,
and then I'll meet you back here.
My turkey sausage is just kind of chilling on low heat.
I'm going to go ahead and mix in the strawberries, salt and pepper, and half of that egg.
Er, strawberries.
I'm just going to kind of eyeball it.
So then just a little bit more black pepper just to taste.
Half of the egg.
Cool.
And that's just going to kind of bind it together.
So now I'm going to take the sweet potato out of the oven.
It's nice and soft.
Now go ahead and just wait for this to cool just for a few minutes,
because you're going to be scraping out some of the insides.
That sounds appetizing.
I've scraped out some of my insides.
I've scraped out some of the flesh from the sweet potato.
And now I'm just going to take our mixture, and I'm just going to fill it in.
Alright, now I'm going to throw it back in the 400 degree oven,
and I'm going to bake it for another 10 minutes,
and that's just going to let the egg kind of cook up and kind of harden
in case all that goodness.
What an unlikely combo.
