Ice cream sandwiches are something that you buy at your corner milk store in America.
We call them Eskimo pies, but we decided to take it to the gourmet level with different
kinds of biscuits and different kinds of ice cream instead of just your chocolate biscuit
with the vanilla ice cream.
I'm Pat from Minnesota.
And I'm Stik, I'm from Sydney and we're Pat and Stik's Homemade Ice Cream Company.
It was always my dream to make ice cream. When I moved to Australia, I held on to the
dream and thought of something that no one was doing and that was ice cream sandwiches.
So I went back to the US and went to do an ice cream making course at the University of
Wisconsin.
So we quit our jobs and we started Pat and Stik's.
So we started just making ice cream at home in Pat's little bench top ice cream maker
and we take it down to markets every week at Balmain and sell them.
The first week we sold about 80, the next week we took along as many as we could make
and we sold everyone and ever since then we've just tried getting better and bigger and bigger
and better.
Ice cream sandwiches are unique and they, I don't know, they evoke special feelings
and memories people have from when they were kids and no one in Australia doesn't like
we do so we just thought we'd make them special.
First thing that they do when they see our sign and it says ice cream sandwiches, they
say, oh ice cream sandwiches, how does that work?
We do have to do a bit of explaining sometimes to assure them that it's not just bread with
ice cream smeared on it or anything like that but I think we're getting people into
it and their first response is very gratifying.
What is an ice cream sandwich stick?
Well an ice cream sandwich is a unique structure composed of ice cream and cookies.
No bread.
Do you mean biscuits?
I mean biscuits, twice cooked.
He means cookies.
We only use very high quality ingredients like Belgian chocolate, Dutch cocoa, vanilla
beans.
Yeah, that's the secret and just fresh, natural ingredients, no preservatives, no artificial
anything and we make it all the old fashioned way.
What is the secret to good ice cream stick?
I'd say cream, rich, creamy ice cream.
It's not too sweet, good flavour.
And fresh, freshness is key.
So our primary focus is to keep the quality in and keep it unique and give everything
that special pattern sticks homemade sort of feel.
Stick, what do you want people to experience when they have one of your ice cream sandwiches?
Happiness, satisfaction, I want them to have a flavour hit and something they're going
to remember.
Yep, I want them to go back to the store and have another one.
And then tell their friends.
No one has come up to me on the street yet and said, hey, you're Pat from Pat and Sticks,
that hasn't happened.
I'm waiting for that.
We've had seven years of our lives which we've dedicated to this cream and tried to make
happen and we've been through a long journey to get where we are.
We're still on the journey and we're still having fun making a lot of ice cream.
These cookies, delicious ice cream in a sandwich, it's just happiness.
