My name is Lillian, and today I'm going to be making a mint ice cream freezer pie with
a chocolate crust.
But I'm going to be making it without ice cream, butter, flour, sugar, and I'm doing
it right now for the very first time ever on camera.
I'm going to do the whipped coconut cream first.
So fluffy.

Liz, we didn't use the alcoholic agave in it, sure.
You mean tequila?

The last thing to make is just the mint swirl.
I need one third cup of fresh mint leaves.
And she says to use a magic bullet.
I don't have one.
So I'm just going to use my food processor and hope that this works.
Squeeze.
Puree for a few minutes.

Fingers crossed everybody.
But this is not working.
This food processor is too big.
The blades are too big and too high.
So it's not working.
So I'm going to try this immersion blender, which is smaller.
I'm going to pour it into this small thing and see if it gets high enough to work with
the immersion blender blade.
That looks super not delicious right now.
Even though it smells very good.
It smells amazing, but it does look really gross.
I think it's working.

Yeah.
So that's that syrup.

The mint is awesome.
And it really is where the sweetness comes from.
The coconut cream part, it's not terribly sweet, but it's sweet enough.
It's perfect actually.

And it's just, the coconut cream part is so smooth and silky.
I can't taste the chocolate that much, but actually I'm totally fine with that.
I don't know what I was expecting, but this is better.
It's been a really long time since I had like an ice cream cake or pie.
So we'll just have to wait and see what our resident normal has to say.
I love mint.
I'm so excited.
I love mint flavored things, so I am automatically a sucker for this pie.

The crust definitely has sort of the chewiness of the coconut flakes.
But I mean, it doesn't taste really that much different than just, I mean, it's a crumble
crust.
