So, what is the bush? In New Zealand, that's a term for a piece of ancient forest that's been left here, undisturbed.
Kiwi's are quite passionate about going bush and spending time out in nature.
So, this land has been in my family for about 140 years, but these trees have been here for, in many cases, over a thousand years.
There's very few patches of untouched forest of this sort of age left in the world.
Before we moved down here, when I was about six, I was very, very sick for quite some time, and then this was a place I was sent down to heal.
So, it's a huge part of my growing up, and it's now a huge part of my life.
So, I'm a research scientist, and that training filters through everything I do. I have to enquire, I have to get it right.
So, I've kept up to date with the latest thinking in quantum physics, and that demonstrates the interconnectedness of everything I am not separate from you, and neither are we separate from this bush.
So, it doesn't seem strange to me to talk about the special energy of this bush, because it's science.
Science training made it relatively easy for me to farm organically, because I understand that I have to work with nature.
If you try and work against nature, you're always fighting, and you have to use chemicals in that fight.
It doesn't seem to make sense to me to try and make a product that's good for your health, and potentially have pesticide residences in it.
So, it's all kind of interlinked.
The growing environment and the fertile soils in New Zealand give us an exceptionally high omega-3 content.
Fertility of the land has quite an impact on the flavour, and flavour is really important to me.
The soils on Waahi Bush are full of organic matter. They're alive, and it's important to me that I do everything that I can to make sure they stay that way.
That's why I have livestock on my farm. Now, once I've built the fertility, then we go into a cropping phase that's part of the cycle.
Because I can't grow flax seed continuously on Waahi Bush, we have contract growers who have to be fully certified organic.
They have to be on high fertility soils, and they'd be deemed to be suitable for producing the sort of quality flax we need.
