Swedish kind of cooking.
I don't like trends in food.
I like good food and I'm always searching for a good product.
Three years ago, the trend was to go ecological,
ecological food, ecological products.
And now it's like when you speak about ecological products,
it's marked that it's supposed to be a fantastic product.
Ecological products are not ecological produced.
Many people use that for business, for the world.
And in my restaurant, I always use a couple of dishes,
most of them, the meat cuts are produced in ecological farms.

I'm one of the young guys who like to cook ancient food in Sweden.
I think many people do.
And ancient food, do you say that?
