Combine the following dry ingredients in a large bowl.
Whisk them together, then add one cup of light brown sugar.
Add half a cup of vegan margarine and cut it in with a pastry blender or just do hands
until it reaches a dry, crumbly consistency.
In a separate bowl, combine three quarters of a cup of molasses with one quarter cup
of plain or vanilla soy yogurt.
Also two teaspoons of vanilla extract.
Add the wet ingredients to the dry and mix them up to form a soft dough.
Thoroughly flour your work surface and your hands before rolling out the dough to about
a quarter inch thickness.
Continue the process of rolling out dough and cutting cookies until you can fill a whole
baking sheet.
Arrange the cookies on a sheet of parchment paper.
Bake them in a 375 degree oven for about 10 minutes or until they look done.
Allow the cookies to cool completely on a wire rack before icing them.
To make said icing, combine the following ingredients in a small bowl.
Transfer the icing to a plastic baggie, then twist it up and cut the tip off.
You could also use a pastry tip if you want a bit more finesse.
After a couple hours, the icing will harden enough to handle the cookies.
