and I have many happy memories,
but the memories that are stuck in my mind
are from the Christmas holidays when we picked the olives.
I can't forget my father's excitement as he was waiting to try the first olive oil.
And he had a special way to try it.

I have kept the tradition as a tribute to my late father.
But making olive oil was not what I was doing until a few years ago.
I got my degree in economics in Canada
and then I worked as a stock broker for large international banks.
It was an interesting demanding and stressful job,
but after 20 years I wasn't happy anymore.
I wasn't really making anything and I was missing that.
I was looking for something inspiring.
One day as I was watching my 4 year old kids chasing each other around the olive trees,
it hit me.
I knew right there and then what I wanted to do.
I was going to produce and sell the best products our land has to offer.
Products that they are made with care and respect for the land
and the environment around us.
Products that above all our kids would love.
It wasn't an easy decision.
I still remember the day I resigned.
It was a bright, warm summer morning and I was filled with conflicting emotions.
I was leaving the safety of an office job
to take on challenges of building a new business.
But I was confident.
I knew that building on our history and tradition
I could create products that I would be proud of.
And that's how Inspirational Foods was born.
Inspirational Foods is all about the ingredients.
The natural, healthy products that they are made with care and love.
Our first product is Poetry Organic Extra Virgin Olive Oil.
It's the olive oil that comes from this piece of land only.
Our land.
We took our tradition of making olive oil but improved it
to ensure that we can make the best possible olive oil.
Olive oil is like wine.
Its harvest is different.
The weather plays an important role
and there's not much we can do about the weather.
But we can do things on the way we produce.
That is why we produce organic.
I think it's the best way to protect and preserve our land.
We don't use any pesticides or any synthetic fertilizers
that can harm the land and the people.
And we don't water our trees.
There's no need to.
Olive trees have been producing olive oil
for hundreds of years in these conditions
and it will be a waste of a valuable natural resource to water them.
Traditionally, my family and the rest of the producers of our area
will pick the olives around Christmas.
They waited for the olives to mature and turn purple before they picked them.
We changed that.
We handpicked the olives while they're still green.
I want the olive oil to have the natural fresh green grass flavor
and picking early gives us that.
The funny part is that three years ago
when we went to pick the olives around the 20th of November
there was no meal open to press the olives.
I literally had to drag my friend Spiro from his home
to open his meal so we can press the olives.
The next important part in producing quality olive oil is pressing.
We press the olives within three hours from picking them.
We transport them using plastic crates to eliminate the stress on the olives
and we monitor the temperature at every stage of the process
to ensure that it stays below 27 degrees.
The problem with the temperature is that there is a trade-off.
As you increase the temperature
the old droplets are formed faster and more olive oil is produced
but there is a catch.
You lose flavor and aromas and we can't have that.
We want the quality, not the quantity.
That's why I'm there with a thermometer
checking the temperature at every stage of the process.
We're proud of what we do
but because our olive oil production is limited
we looked for other producers that share our practices
and have the same passion for making quality products.
We have found another three small olive oil producers
that we buy the olive oil to produce La Cuisina Verde.
La Cuisina Verde has all the characteristics of the coronaki variety.
Fresh, green grass and a creamy sensation in the mouth.
We launched La Cuisina Verde less than a year ago
and it already has received a star in the Great Taste Awards
and a silver medal in the prestigious Be All competition in Italy.
